Fall is a busy time of the year. Children going back to school, adults juggling a hectic work and life schedule -- where do we find the time to enjoy the sweeter things in life? Baked apples are a delicious and simple dish to enjoy after any meal. We love making and sharing recipes that require only a few ingredients, most of which could be found in your home!
- 4 firm gala or granny smith apples, cored and tops cut off
- ½ cup of chopped walnuts
- ½ cup of chopped pecans
- ¼ cup raisins
- 2 tablespoons of honey
- ½ tsp. cinnamon
- Pinch of ground cloves
- 2 tablespoons of brown sugar
- ¼ cup of softened butter
Preheat the oven to 350° Fahrenheit. If you are using a toaster oven to bake this dish, place the apples on a tray lined with parchment paper. Otherwise place the apples in a 8" x 13" baking dish.
In a medium sized mixing bowl, combine chopped nuts, raisins, honey, cinnamon, cloves, sugar, and butter. Use a spoon or spatula to fold the ingredients into each other until the chopped nuts are well coated. Give the mixture a taste to see if it is sweetened to your liking.
Fill each apple with the nut, honey, butter mixture up to the top. Cover with a lid (if the baking dish comes with one) or cover with a piece of tin foil and place it into the oven. Bake covered for about 20-25 minutes, then uncovered for about 20 minutes.
Using oven mitts, remove the baked apples from the oven and drizzle them with honey or serve one with a scoop of ice cream. Enjoy!
